Vegetable Noodles with Crispy Chili Crickets

Noodles, a classic recipe of Thai and Japanese restaurants: Noodles with vegetables are always on the Thai menu. Also called Chinese spaghetti or Japanese spaghetti, are the sautéed spaghetti with vegetables in the stir-fried or stir-fry technique, that is, sautéed on a lively fire together with the vegetables in the wok with the addition of soy sauce, spices and flavors.

What are the noodles? They are pasta vermicelli that are prepared with different flours and were born in China more than 4,000 years ago, among the oldest Chinese pasta. Over time they have spread to Thailand, Japan, Korea, the Philippines and Malaysia, becoming a staple food in their cultures. They are similar to our spaghetti, but the processing technique is very different.

Let’s discover our recipe enriched with chilli crickets to give this recipe extra taste and why not an addition of protein! 

Let’s have a look at the ingredients (for 2 people):

  • 200 g noodles (rice, wheat or whole grain)
  • 2 tablespoons sesame oil or olive oil
  • 1 carrot, cut into julienne
  • 1 zucchini, cut into julienne
  • 1 pepper (red or yellow), cut into thin strips
  • 100 g of chili crickets
  • 2 cloves garlic, chopped
  • 1 piece of fresh ginger (about 2 cm), grated
  • 3 tablespoons soy sauce
  • 1 tablespoon of honey or maple syrup

 

Process:

 

  1. Cook the noodles: Bring a pot of lightly salted water to the boil. Cook the noodles according to the instructions on the package, then drain and rinse them with cold water to stop cooking. Set aside.
  2. Prepare the vegetables: In a large frying pan or wok, heat sesame oil over medium-high heat. Add the garlic and grated ginger, stirring for about 30 seconds until they release their aroma.
  3. Saute the vegetables: Add the carrots, zucchini, peppers and crickets. Stir for 5-7 minutes until soft but still crisp.
  4. Add the toppings: Pour the soy sauce and honey into the pan. Mix well and cook for another 2 minutes.
  5. Combine the noodles:Add the cooked noodles to the pan and stir well, making sure they are evenly covered with sauce and vegetables.
  6. Decorate and serve: Transfer the noodles into individual dishes.
