Cupcakes are delicious sweets, ideal for breakfast or as a snack, even outside the home! They are popular with everyone and are probably the most famous and classic version of these fantastic American cakes.
Let’s have a look at the ingredients (12 cupcake):
- 120 g softened butter
- 150 g granulated sugar
- 2 eggs
- 200 g all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 120 ml milk
- 1 teaspoon vanilla extract
- 100 g chocolate covered crickets
Process:
- Prepare the oven and liners
Preheat the oven to 180°C (350°F) and line a muffin tray with cupcake liners. - Cream the butter and sugar
In a bowl, beat the softened butter with the sugar until light and fluffy. - Add the eggs
Add the eggs one at a time, mixing well after each addition. - Mix the dry ingredients
In a separate bowl, sift together the flour, baking powder, and baking soda. - Combine milk and vanilla
In another bowl, mix the milk with the vanilla extract. - Incorporate wet and dry ingredients
Gradually add the dry ingredients and the milk mixture alternately to the butter mixture, starting and ending with the dry ingredients. Mix until smooth. - Add the chocolate chips
Fold in the chocolate covered crickets gently with a spatula. - Fill the cupcake liners
Divide the batter evenly among the cupcake liners, filling each about 2/3 full. - Bake
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. - Cool
Let the cupcakes cool completely on a wire rack.
Conservation:
The muffins can be kept for 2-3 days at most under a glass bell. If you want, you can freeze the baked cakes, then let them thaw as needed to heat them in the oven slightly before serving.
